Cut the fruit with or without the peel into chunks and purée in a food processor or blender. Pour the purée on to silicone mats or clingfilm-lined trays. Make sure the pool of purée doesn't go over the tray edge; smooth by shaking and tilting the tray to make it spread. The purée should be no thicker than 3mm.
